All this month, Jim has been experimenting with a low-fat, raw vegan diet. He discusses his reasons for trying a low fat diet, and how he s been feeling with the changes, in his first and second posts so far this month.

Many of you have heard us mention the famous low-fat, raw vegan 80/10/10 diet here on our blog. Well, today I d like to highlight the individual behind that diet. So?

I'm makin' nothing today, or for the next eight days! Think of all the time I'm saving myself by consuming only mono meals for nine days. What will I end up doing with that extra time? So far, today, I've spent a long time outside soaking up the sun's beautiful rays that I've missed far too much this Winter. I have no idea what the rest of this mono journey is going to be like, but I'm up for the adventure!

I've started a little journal on my desktop to track my nine days of mono meals, so I'll share what I've written from time-to-time. Here's what I have, so far...

Is cacao dangerous or is it a super food? Anyone who's been learning about raw foods knows about raw cacao (check out a recent episode of Know Your Food: Cacao). It's raw chocolate without all the processing and additives normally included in the chocolate bars many buy from standard grocery stores. In its raw form, cacao has different nutritional components than typical processed chocolate. Many claim that raw chocolate is filled with mega doses of nutrients, making it a super food, and therefore extremely healthy for the human body. Others claim that even in its raw state, cacao is a stimulant that taxes the human body and cacao is more like a poison than a food. I've heard murmurs about negative effects of cacao for many years, but that was always subdued by the vociferous praise of cacao.

Recently, my friend Kevin Gianni (The Renegade Health Show) spoke out about cacao and his experiences with it. Kevin is well known in the raw food community, so his words came as a shock to many people. He explained in his video (below) that he developed a rash on his stomach. After much investigating and diet changes, he came to the conclusion that cacao was causing the rash (eliminating the cacao caused his skin to clear). He also stated that cacao had been stripping his body of vital minerals. Kevin pointed out that he was simply sharing his own experience with cacao, possibly shedding some light on a subject that may need to be further investigated. He advised others to take a look at their own reactions to the food, to see if they are experiencing any problems.

Well, here's my latest update on my nine days of mono meal eating. I have a headache this evening and I'm headed to bed early. I'm hoping the headache is a detox symptom and that it will be gone when I wake up.

Jim here with another wonderful edition of Weird Wednesday. Here's something I find a little weird about food (and, I apologize in advance if this comes off a little preachy).

See, I work in an office and sit rather close to the corporate kitchenette. Routinely, people bring in junk food to set out for everyone -- cookies, donuts, cakes, pastries, pies, candy bars, nut rolls, cheesecakes, summer sausages, cheese cubes, fondues, etc. The thought seems to be that, in putting these things out for everyone, you're showing you care for them.Offering large servings of concentrated fats and refined sugar is viewed as a favor, as an altruistic service for your fellow coworkers. But this odd fact isn't even the weird aspect of my post (although, now that I think of it, that is pretty weird).

Jim here... Wow, how awesome is it that today's Makin' It Monday falls just one day after Mother's Day -- and that we had ?a very special guest edition ready to post featuring ... ?my awesome mom! ??!!! ?I love my mom so much ... she's the best mom ever! And you'll love watching her demonstrate how to make 100% raw hummus. Mom might be 100% Italian, but she makes a pretty mean 100% Lebanese raw hummus, which is a pretty popular dish in my family. Jim here... I was listening to a radio commercial the other day that promised to reveal the "secrets that credit card companies DON'T want you to know." You hear that kind of rather manipulative marketing all the time, right? It's a psychological thing, I suppose -- filling your mind with intrigue almost instantly. My credit is pretty decent, but I was thinking, "Wow, I wonder what those secrets are?!" We humans are curious creatures, aren't we?

But then I started to laugh to myself, imagining a raw foods radio spot adopting that technique. "Buy our special report and learn all of the Secrets that Raw Foodists do NOT Want YOU to Know!!!" And then I laughed some more. Know why? Because, when you think about it, there are absolutely, positively NO secrets raw foodists don't want you to know! Isn't that stunningly cool? In fact, the entire message of the movement is conveniently included right there in the words "raw foods." It couldn't be simpler -- the cure for what ails so much of the planet, neatly summed up in two words.

We have two events scheduled for this weekend and we are looking forward to both of them! The first is a Raw Food Potluck Meetup. I haven't decided what I'm creating, yet. So far I'm thinking I'll make either an apple pie or some beet noodles with alfredo sauce, but I know how things usually go when it's time for me to prepare something special. I usually feel like I don't want to make what I had planned, and I search around in the fridge to see what pops out at me. I almost always go by what I'm inspired to create at that moment. So, who knows what I'll end up making. I'll try to take pictures of my creation as well as pictures of the other raw food dishes that others bring.

This will be our first raw food potluck. When I first went raw it was something I was doing special for myself, by myself, so I didn't join any of the raw food meetups and didn't want to make it a group activity with my friends.After two years of raw (a little over one at 100%), I've done (and continue to do) what I needed for myself.Now, I'm ready to share my experiences with everyone and to be an active member of the raw food community.So, I'm looking forward to the raw food potluck tomorrow!? Jim here... Conventional wisdom says we shouldn't judge a book by its cover, right? Well, what about recipes? Should we judge them by their names?

When KDcat was young -- well before we followed a raw diet -- her friends sometimes scoffed at our typical vegan fare. After all, few kids would voluntarily eat "Pasta with Spinach Sauce."? But, we discovered, change the name and suddenly they're lining up for seconds. Instead of "Spinach Sauce," Wendi came up with "Jungle Sauce"! How exciting, right?

For this week's Makin' It Monday, I'll share a super quick and yummy recipe I created. Since we have all of those delicious oranges, guess what the recipe is going to include? ;-)
