Look at the dinner we had this evening!!!

A bean and rice burrito, taco with all the toppings, tomato and pepper salad, and sweet orange salsa! Yum, yum, yum!!! I'll be posting the pic again and sharing a recipe on Monday.

Okay, we promise that, once the "Know Your Food" series normalizes (hopefully by next week), we'll be posting daily 3- to 4-minute segments, not these gargantuan bandwidth- and free-time-hogs! But, it's a decent 8 minutes of solid entertainment (kind of/sort of). So, hope you enjoy. We call this "Episode 1 (sort of)." You'll see why. Includes a few bonus minutes of discussion on goals & synchronicity.

As you saw, we didn't air the entire APPLE show. So, a few notes are in order:

While I was growing up in the Midwest, I had a rich uncle who lived out East in Philadelphia. I didn't know him very well at the time, but would often glean stories via the family grape vines of his business successes. After high school, I attended college in Northeastern Pennsylvania -- Wilkes University -- where, incidentally, I first met Wendi! :-)

Being out there, I got to visit my uncle from time to time, and dine with him and his family. ?Among other things, he was quite the gourmand. I'm not so sure what he'd have thought of raw foods, although I suspect he'd have appreciated the many gourmet efforts.

So, did you think we'd forget about Makin' It Monday during Wendi & KDcat's big cross-country tour? Absolutely not! ?While in Salem, Wendi filmed Kerry Matson demonstrating one of her favorite raw recipes -- heck, one of our favorites, too! I'd have to say that raw apple pie is one of the classic raw dessert recipes. Everyone interested in raw should know how to make this! (And anyone who tastes it will soon be interested in raw!)

Rhio will be visiting with us and she'll also be meeting with others during her two-part presentation for the Pittsburgh Raw Food Meetup on Saturday.You don't have to be a member of the meetup to enjoy this presentation. I thought I'd stay with the video blog format for a while, as I've been capturing some outstanding stuff here in Chicago. (We're here until Thursday.)? Well, a few of the vids are "okay," but the bulk of them are absolutely amazing, so be sure to check in every day for these great Chicago vids. (BTW, I'll dub this series, "The Chicago Raw Food Scene," although partially misleadingly so, as the videos are not always *about* Chicago, per se. Rather, we shot all of the videos *in* Chicago. Here's an impromptu interview with Matt Miller, the gourmet raw foods chef from Maggie's Mercantile, a vegan/raw restaurant in Pittsburgh, PA. We met Matt @ a recent Raw Foods Meetup here in Pittsburgh. In the video, we discuss Matt's famously addictive raw blue corn chips -- deemed by yours truly as the "holy grail" of raw foods. Below, I'll go over the ingredients, etc.

We've been getting a lot of emails and comments about two subjects since we posted our itinerary, so we thought we should respond in a way to help answer the questions/concerns that maybe more of you may be having as well.

Okay, so here's a recipe that may make you raise an eyebrow. "Baked " "Rice " Well, it's not really baked and there isn't really rice in it, but it tastes like a baked rice and veggies dish! I created this one day by mistake and we all loved it.
