Jim here... Today is April 25, 2009 -- Wendi Dee's Birthday!!? She's asleep now. It's 1:30 in the morning & I've been up for hours assembling something stunningly amazing to share with you. You see, this year, I asked some friends, family, and foodies to take a page of a sketchbook and offer Wendi some Happy Birthday wishes -- and then send it back to me so I could bind it all into a large book!? WOW!!! WOW!!! WOW!!! Check out the response from 40+ people from around the globe. It's a little overwhelming to see this much positive energy in one place. Clarifications: (1) Yes, as some of you may have guessed, Wendi's body has circled the sun more than 25 times. If you visit the site, I explain what the "25th" birthday means a little more. It's basically about the amazing power of raw foods. (2) No, I didn't send messages to David Wolfe, Gabriel Cousens, Woody Harrelson, or other raw food celebrities Wendi isn't friends with. I'll leave you with an old Halloween picture of me before I started eating raw foods. Halloween used to be the day I'd dress up and feel okay being myself, because I was in costume. It's funny to me that this year I feel no need to cover up in order to be myself. Halloween is still my favorite holiday, however!
I wrote on Monday that today (Thursday), we would be discussing mint here -- specifically, harvesting some late-remaining mint from our mint bed (shown above in all its glory) and making something with it. I failed, however, to take into account that it's been getting darker earlier and earlier these days. By the time I was able to get outside and talk about mint, it was just too dark.
So, I thought I'd forego the video, and just write up some minty facts to freshen up your Thursday. To begin, I would highly encourage anyone who is new to gardening, and wants some early success, to experiment with mint (including spearmint, peppermint, and the various varietals available here and there). I can almost guarantee that you'll have some wild (and I do mean wild!) success, and will soon enjoy more mint than the law allows. It's so easily grown, and spreads around so easily (via its root system), that it would almost be considered invasive if it weren't so darned desirable and fragrant. (It's tough to walk past a mint bed without snatching up a leaf, rolling it between your fingers, and inhaling the scent deeply.)

Here's some coconutty video footage from our Florida Keys excursion. First up is some footage of Randesh, from www.TheGuana.com, who obtains fresh coconuts for Charlie Wilson's Key West restaurant, Help Yourself (see yesterday's blog post).Notice that Randesh uses a proper piece of equipment -- a large machete (or cutlass) -- which makes short, easy work of opening these precious gifts of nature! In the video footage following that, you'll see how comically difficult it is to open a young coconut when you lack the proper equipment. We actually went out looking for a machete, but could only find a large chef's knife at a local K-Mart. Yep, they were sold out of machetes! (Ironically, the chef's knife -- the heaviest one the store had -- cost about $17, while plain old machetes run just $10 or so at most hardware stores. Next time we'll keep looking...)

I received some very sad news about the holistic doctor I've been seeing during my raw journey. Dr. Amy Ruth Stine died Saturday after a rock climbing accident. This news breaks my heart. Dr. Stine was an amazing woman and doctor. She was extremely intelligent, acutely in tune with how we are all connected and one, compassionate, loving, thoughtful, and had a gift of really getting to know each patient as an individual and friend.
It was with Dr. Stine's care that I was able to track my progress with the raw food diet. She encouraged me to follow my instincts (which were telling me that raw is the way), cheered me on with the many changes that I was going through (physically, mentally, spiritually, and emotionally) over the years, and told me many times that I inspired her! Imagine how wonderful that made me feel---to be inspiring someone as wonderful as Dr. Stine.

You probably haven't met our official tour guide yet. We call her Simone. She's a bit testy at times, but always gets us safely to our destination (although sometimes in rather roundabout ways). She added an extra one-time $89 fee to our trip budget, but we're very satisfied with her performance so far. You see, Simone is our trusty GPS unit!
Leaving Las Vegas, she guided us through the Hoover Dam area on our way to Arizona, a geographic area that I think would be better described as a "state of extremes." There, we experienced super hot, sunny days, freezing nights, snow outside even when it's sunny and hot, and also a bizarre experience we had in which some bananas actually froze and then nearly roasted all in the same day.
