Jim here... I have about 3 free minutes this afternoon to post here, so please bear with me as I type this post as fast as humanly possible. Okay, here's a fascinating video we shot last night. For anyone unfamiliar with live blood cell analysis, definitely check out this video. What they do is take a small drop of your blood (via a painless finger prick) and magnify it like 80 kajillion times. Then, they show you a real-time picture of what's going on in your blood.

Today, for Makin' It Monday, Jim has taken you through the steps of making a vegetable wrap. He came home for lunch, pulled the veggies out of the fridge, and the filming began. He quickly shows how just about anyone can prepare fresh, raw, delicious food in less than fifteen minutes. His goal was to get it done in under ten minutes, but it actually took about fourteen. Still, fourteen minutes to prepare amazingly tasty, delicious, and nutritious food is AWESOME!
This pie is amazing and exactly like a traditionally cooked pumpkin pie! I took a few different pie recipes and altered them until I came up with this recipe.

So far, so good, with the mono-meal fasting for Navratri! I mentioned that I'll be sharing an almost diary-like blog entry at the end of each day, to share things with all of you. Well, today's diary entry is quite long. I do share a lot about what was going on with me before the fast, and why I haven't been around much online to connect with all of you.

Jim here... Today is April 25, 2009 -- Wendi Dee's Birthday!!? She's asleep now. It's 1:30 in the morning & I've been up for hours assembling something stunningly amazing to share with you. You see, this year, I asked some friends, family, and foodies to take a page of a sketchbook and offer Wendi some Happy Birthday wishes -- and then send it back to me so I could bind it all into a large book!? WOW!!! WOW!!! WOW!!! Check out the response from 40+ people from around the globe. It's a little overwhelming to see this much positive energy in one place. What a momentous day she's in for in another 5 hours or so when she gets up and is greeted by such a surprise! If you'd like to say Happy Birthday, just leave a comment here! Thanks to everyone!
Clarifications: (1) Yes, as some of you may have guessed, Wendi's body has circled the sun more than 25 times. If you visit the site, I explain what the "25th" birthday means a little more. It's basically about the amazing power of raw foods. (2) No, I didn't send messages to David Wolfe, Gabriel Cousens, Woody Harrelson, or other raw food celebrities Wendi isn't friends with. However, if they are huge fans of Wendi's, they are more than welcome to contribute via email or comments! LOL ;-)

One reason I keep going on and on lately about raw desserts and raw ice creams is best conveyed with an example. ?Here are the ingredients in Cool Whip, a commonly available whipped topping:
- water
- hydrogenated vegetable oil (coconut and palm kernel oils)

- skim milk
- light cream
- less than 2% of:

- natural and artificial flavors

Wow, I had a chemistry set in 5th grade that had a lot of things that sounded like some of those items. It's actually mind-boggling to envision the industrial processes necessary to produce everything on that list -- not that it's entirely possible to do so. There are four parts to blood: red blood cells, white blood cells, platelets, and plasma. Using a specialized microscope, one can easily view these parts of the blood. Red blood cells deliver oxygen to, and carbon dioxide from, the body. White blood cells, also known as leukocytes, help defend the body against disease and anything that they see as unnatural or foreign. Platelets help form clots to prevent bleeding. Plasma, comprised of about 90% water, is the fluid that transports all of the above.
