Wow, who knew so much work goes into meeting up with people all across the country ! It's going to all be worth it, though, to meet so many of you!! Below are the definite meetups happening. One reason I keep going on and on lately about raw desserts and raw ice creams is best conveyed with an example. ?Here are the ingredients in Cool Whip, a commonly available whipped topping:
- water
- hydrogenated vegetable oil (coconut and palm kernel oils)
- high fructose corn syrup
- corn syrup
- skim milk
- light cream
- less than 2% of:
- sodium caseinate
- natural and artificial flavors
- xanthan and guar gums
- polysorbate 60
- sorbitan monostearate
- beta carotene (color)
Wow, I had a chemistry set in 5th grade that had a lot of things that sounded like some of those items. It's actually mind-boggling to envision the industrial processes necessary to produce everything on that list -- not that it's entirely possible to do so. After all, among the list of ingredients are "natural and artificial flavors." Ever wonder what, exactly, those are?

Nadi Balance: Part VI
Here's some coconutty video footage from our Florida Keys excursion. First up is some footage of Randesh, from www.TheGuana.com, who obtains fresh coconuts for Charlie Wilson's Key West restaurant, Help Yourself (see yesterday's blog post).Notice that Randesh uses a proper piece of equipment -- a large machete (or cutlass) -- which makes short, easy work of opening these precious gifts of nature! In the video footage following that, you'll see how comically difficult it is to open a young coconut when you lack the proper equipment. We actually went out looking for a machete, but could only find a large chef's knife at a local K-Mart. Yep, they were sold out of machetes! (Ironically, the chef's knife -- the heaviest one the store had -- cost about $17, while plain old machetes run just $10 or so at most hardware stores. Next time we'll keep looking...)
So, we've been building up to something exciting all week long -- and here it is! As it turns out, Kevin Gianni is not only a "renegade health" expert, motivational speaker, and all-around great guy; he's also a singer/songwriter!? And he even has his own CD called "God Loves Guinea Pigs" (original songs and artwork by Kevin).
During the past few days, we shared some great interviews with Kevin. In addition to all of the material covered so far, both Jim and Wendi had asked Kevin some musical questions. So, we saved those parts of the interviews for today. Here are the bonus sections from those interviews, including the funny story about Kevin dropping his pants in public!

Kevin and Annmarie Gianni will be in Pittsburgh for the Steeler's game on Sunday. They'd love to meet Pittsburgh raw foodies while they're here! So, if you can make it to meet up with them, let Wendi Dee know as soon as possible. We'll either be meeting at the East End Food Coop (if I can reserve the space at the last minute) or at my home (South Hills/Brentwood). Please respond by Friday at 5:00 p.m. about your availablity.
Jim here... A few months ago, I was in our local food co-op's juice bar. I'd ordered an apple juice and had cringed when I saw the barista chop up four Granny Smiths and nonchalantly toss the whole lot, seeds and all, into the juicer. That juice was for someone else. So, when my order came up, I politely requested that he cut the seeds out -- a request he reluctantly granted, although not without showing considerable annoyance. My thinking was: Hey, those seeds contain cyanide! Why would I want to consume that, even in small amounts
But then... Have you ever known anyone who died from eating apple seeds? ?I know I haven't. Also, after mentioning this to a few people I know, I found that a number of them regularly ingest apple seeds. And, well, they're still living. So, is there any truth to the rumors? And, should we be concerned at all about this?

Hi everyone!? Sorry for not posting yesterday. Things got crazy-busy on my end, and Wendi is still out of town on her tour. I know poor Deb Young is eagerly awaiting our next installment, as that's the one from Wendi and KDcat's visit to sunny L.A. (during which they had SO much fun and captured some great footage at a raw restaurant there!). However, I honestly do not have a single free moment this week. So, we'll pick up on Monday, April 5 -- by which time our raw travelers will have returned home!? Upcoming posts include:
