Today we welcome Leela Mata from the Peaceful Valley Ashram (www.LeelaMata.com) for another episode of Pure Jeevan's Makin' It Monday "Guest Raw Chef" edition. In this episode, Leela demonstrates how to make a delicious summertime chutney.

Since Marigolds are seasonal, and likely available only in certain areas, please consider them optional. Perhaps substitute another edible flower of your choice (and let us know if you do!). One of our readers, Julie, asked me to update her on what kind of diet I'm doing and why I'm doing it. The last time I publicly made changes with my diet, I received many similar questions. So, I figured maybe it would be a good idea to respond to her question here on the blog for anyone else wondering the same thing.

I did explain, in a long post, about experimenting with my diet being important to me.If you didn't read that entry, it will answer a lot of your questions. For many of you, I think I know what you are thinking: "Wendi was pretty much morbidly obese, her health was horrible, but she's now healthy. Why would she change anything with her diet when she has already found what works "?

Well, it's true. I am extremely healthy compared to how I was before I started consuming raw foods. Here are some pictures to show the changes, to motivate some of you currently struggling with eating more raw foods...

Today I'd like to do something different for Makin' It Monday. I'll tell you what we've eaten today, but I want to hear what's been happening in YOUR kitchen!

This morning I sliced up three bananas, drizzled them with some agave, sprinked a bit of Himalayan crystal salt on them, and then topped them with hemp seeds and sprouted flax seeds with cranberries and gogi berries. I love this breakfast because it feels like I'm eating something a bit complex and more filling than simply eating the bananas plain (which is how I almost always eat them). KDcat had a bowl of oatmeal (not raw), and Jim had a few pieces of fruit.

Hi everyone! It's Wendi here, back to updating the blog and giving Jim a much-needed break. ;-) He did an amazing job with all he did while we were away (his full time corporate job; assisting me with a part-time computer job; keeping the house ready for realtors and potential buyers to stop by; dealing with some sad issues around our dog, Julia; connecting with our hosts and those requesting meetups/talks across the country; catching up with KDcat and I for a bit each evening to hear how we were doing; collecting pictures/videos/notes from me to then go through and create blog posts for all of you; helping friends fix up their attic into a useable place; and so much more)! He missed us a lot, and we missed him a lot, too.

So, here we pick up from where we left off with our travels yesterday...

It wasn't easy leaving Arizona. KDcat and I both wished we had more time to play on the rocks in Sedona. But, we'll keep that for a time when all three of us (next time with Jim) can be there to experience the wonder of that beautiful place. So, it was off to New Mexico! Since our host in Albuquerque was going to be busy until the evening, we slept in a bit before leaving Arizona.

In Albuquerque, NM, we stayed in the home of the beautiful Darshanie, who was out of the country visiting her daughter and attending the wedding of her brother. I met Darshanie at the Peaceful Valley Ashram a few years ago (the same ashram where I held a raw food spiritual retreat). She's one of Leela Mata's beautiful and talented daughters, creating candles which she sells as well as offering intuitive readings [click here to learn more about Darshanie]. It was wonderful to be invited to stay with Darshanie during our travels, and I was a bit sad that she wouldn't be there when we arrived, but who would ever miss out on the chance to attend an Indian wedding ! If you're ever invited to attend one, consider it a huge honor and accept the invitation. Indian weddings are breathtakingly beautiful in so many ways.

So far, so good, with the mono-meal fasting for Navratri! I mentioned that I'll be sharing an almost diary-like blog entry at the end of each day, to share things with all of you. Well, today's diary entry is quite long. I do share a lot about what was going on with me before the fast, and why I haven't been around much online to connect with all of you.

Jim here... Wow, we haven't posted in a few days. That calls for some action! Hmmm... how about taking a look at some delicious mini pizzas Wendi whipped up the other day:

We went absolutely nuts for these little "pizzas." They were both tasty and fun. If memory serves, I believe she made them by taking slices of firm roma tomatoes, spooning on some improvised pesto sauce that she whipped up, sprinkling on some chopped basil leaves, sprinkling on some "cheese" that she made with ground Brazil nuts, garlic, and salt, and then topping each "pizza slice" off with a half cherry tomato. No recipes necessary here; just take a look at the picture & go try it!

As we said yesterday, we have some fantastic videos to share from RSF East last weekend. To launch a series of interviews, we want to reiterate that Pure Jeevan has always been a holistic site, meaning that we like to focus on all aspects of a human being's optimal existence (mind, body, spirit, and emotions). While it's not always "all about the food" here, it's also fair to say that it all really does start with the food -- super-nourishing 100% raw living foods! So, it's only appropriate that we begin this series of interviews with a raw food chef.

RawDawg Rory was a huge pleasure to meet and hang out with. The man exudes happiness, and it's quite infectious! We had a great time talking, and of course talked a lot about tasty raw foods. In this video, RawDawg shares a delicious dessert recipe. Here it is:

For today's installment of Makin' It Monday, we wanted to share something that we've been making a lot of lately. It's so simple, yet so delicious and refreshing. Here's the recipe:

  • 2 cucumbers
  • 3 large stalks of celery
  • 1 handful of cilantro

That's all!? You might finish with a pinch of your favorite salt (optional).? Also, since the cucumber is an extremely water-heavy veggie, I would advise you to run it through the juicer several times. Here's what I do:

As many of you know, I've been working on all aspects of myself---continuing to grow healthier in all ways (body, mind, spirit, and emotions). After a lifetime of feeling that I wasn't worthy of my own attention and affection, I learned to love myself. That was a huge thing for me and I am still overjoyed to acknowledge who I am and proudly proclaim that I love myself.

I'm not perfect, but I'm perfectly me---allowing myself to blossom more fully into who I am as the days go by. I've been openly sharing my journey because I know that I'm not the only person who has lived a life without self love.I receive emails from so many of you saying that you can relate to what I've been through, the pain I've suffered on all levels. You've shed tears and thanked me for my story because it has helped you see more clearly your own self. With open arms, and an open heart, I love all of you. It brings me great joy to know that through sharing I am able to help you grow and blossom more into your own beautiful selves. Imagine a world where we all know and love ourselves for the lovely individuals that we all are! What a beautiful and fragrant garden there would be!

Do you know the saying about freely giving out love because you never run out of it? Well, that's definitely true! There's something else that happens, however, the more you share love: it comes back multiplied more than you ever could have imagined! That's what happened to me on my birthday--I was overwhelmed with a flooding of love coming in from all over the world!
