The mono meals ended and I did create that beet pasta with alfredo sauce that I was dreaming about. So, here's the recipe:
BEET PASTA
We've been extremely busy, but KDcat and I did take some time to make some dehydrated food the other day. We rarely ever use the dehydrator, so we've been eating different foods than we normally do and enjoying it.
We didn't take pictures of everything, but here's a list of what we dehydrated:

I want to admit something to all of you: Sometimes I still cry because of how people treated me when I was obese. Because I stuffed all of my "negative" emotions deep inside my entire life, it's going to take some time to fully release them. I'm working on it, however, and making tremendous progress with healing myself on all levels. I'm not telling you these things so you'll feel sorry for me, however. I'm telling you because I am thankful for all the pain I endured. It shaped me (in more ways than just my physical appearance) into the person I am today.
Even though it sounds strange, and somehow wrong to feel this way, I'm thankful that I was obese. I'm thankful for all of the experiences during my life, even the extremely painful, traumatic ones. Maybe if I was a different kind of person I would wish that those things didn't happen to me. However, I am using those experiences in positive ways. They've helped me understand people even better, and to understand myself on a deeper level, as well. When people reach out to me it's not only because I'm an approachable person, it's because they sense that I understand them--and they're right. I DO understand them. I understand you. My experiences, coupled with my gift of empathy, help me relate to you in a way that maybe not everyone else is able to do.
Hi everyone!? Sorry for not posting yesterday. Things got crazy-busy on my end, and Wendi is still out of town on her tour. I know poor Deb Young is eagerly awaiting our next installment, as that's the one from Wendi and KDcat's visit to sunny L.A. (during which they had SO much fun and captured some great footage at a raw restaurant there!). However, I honestly do not have a single free moment this week. So, we'll pick up on Monday, April 5 -- by which time our raw travelers will have returned home!? Upcoming posts include:

Continuing with our Taco Week, here's a quick and easy (and delicious) salsa recipe. You can really have a lot of fun with salsa, and can get highly experimental if you like. Almost anything tastes great in salsa. This one is fairly basic, so feel free to spruce it up with some of your favorite ingredients. Jim here... We know a lot of people who exist on a high-raw lifestyle, and many others who aspire to eat a 100% live food diet. I don't believe there is an exact threshold that makes one a "raw foodist." That term is more or less just a general description you might use about yourself or anyone. Aside from the labels, though... If you want to talk about recommended levels of raw intake for optimal health, quite a number of web sites and health books seem to recommend shooting for around 80% of one's intake to be raw, with a careful eye on the other 20%. We certainly agree with that as a good starting goal, adjusting upward or downward as you gain feedback from your body.
Of course, most of the people who do follow a high-raw diet are usually by definition highly health-conscious about any non-raw foods they eat. I've yet to meet, for example, a raw foodist who occasionally eats Burger King Double-Whoppers ?(although, I'm sure that seemingly odd combination must exist somewhere).
Hi everyone!? Sorry for the late post tonight. I had a busy day, and even met with a new realtor to help me sell The Luck House! (Wish us luck on that front -- but I have a super-great feeling that this new realtor is 10x more professional and knowledgeable than the previous one.)
Today I thought I'd give you a peek into Wendi's rather fascinating Inbox. While she's away, she asked me to monitor her Pure Jeevan mail box and field as many of the questions as possible. It's been ... interesting! :-)? I never realized the volume of email that she receives! It's almost a full-time job to keep on top of it (which I haven't been able to do as well as I'd hoped -- although I now have it down to just a ?hundred or so unanswered ones, so that's progress!).
Rawbin Rescues Turtle
I had a fantastic time at the 2008 Green Festival in Washington, DC. My wonderful friend, Rawbin, picked me up last Thursday and we had a nice drive back to her place in Maryland. She lives in an almost magical setting with wooded areas, horses, a goat, chickens, dogs, and cats! KDcat will not want to leave when she visits Rawbin someday. Above is a video of Rawbin rescuing a turtle that was in the middle of the road near her home.
