I need fast & easy meal ideas (esp. breakfast & dinner) -- time is a luxury I don't have (taking 18 college credits, internship, PT job and I started a natural perfume business!). By the end of the day I am so exhausted that I'd rather not eat than go in the kitchen & try making somethin raw.

If you're dealing with exhaustion or fatigue, we'd like to direct you to a recent blog post discussing the subject. As for time being a luxury, we address that, as well, in the same post. You'll always hear the same thing from us about limited time in relation to your diet: Make the time! Your overall health is what's most important in life and it's imperative that you arrange your life so that you have plenty of time to not only prepare healthy meals, but to also eat them in peace without feeling rushed.

With that said, it's also important to realize that eating healthy doesn't need to take hours out of your life. There are plenty of raw food recipes that are not only quick and easy, but also packed with nutrition! This weekend is Mother's Day, so today's Thankful Thursday is dedicated to the memory of my own mother, Elizabeth.

As we mentioned in one of our first blog posts, Pure Jeevan met with Leela Mata at her Peaceful Valley Ashram to discuss the details for some 3-day Raw Food Spiritual Retreats for you during 2008! We've got three incredible posts coming your way this week, and we're going to get started right here and NOW with a one-hour interview with the incredible Kevin Gianni. As most of you know, we postponed our RV Tour recently.As part of that, we'd planned to stage a fun event related to the All Raw Directory.We'd planned to air this interview with Kevin (conducted back in December 2008) for that event.

Fast-forward to today and we realize that, like our raw RV Tour, our All Raw Directory promotion will have to wait. It's funny how things trickle down like that. But, all is not lost. This is still an incredible interview -- and guess what ! It's only part one of a two-part interview, as well as a special super-fun surprise we'll be announcing on Friday. We promise: No one in the raw food community will want to miss Friday's post. All we'll say now is that it's a truly unique, limited opportunity unlike anything you've seen here before! Of course, there's that 1% chance that something unexpected will happen. But, Portland feels right. It always has for us; we nearly moved there in the late 1990s. We had books on Portland back then, and I was buying their newspaper each week to hunt for jobs. It just never panned out, though. I suppose we were meant to live in Pittsburgh for a spell. It would be easy for me to list many reasons why Pittsburgh served a purpose for us. But, yeah, I think we're Portlanders at heart. So much about that city resonates with us. It'll be a homecoming, for sure! I want to reiterate a few things that I'd written in comments recently, slightly clarified in places.

One of our readers, Julie, asked me to update her on what kind of diet I'm doing and why I'm doing it. The last time I publicly made changes with my diet, I received many similar questions. So, I figured maybe it would be a good idea to respond to her question here on the blog for anyone else wondering the same thing.

I did explain, in a long post, about experimenting with my diet being important to me.If you didn't read that entry, it will answer a lot of your questions. For many of you, I think I know what you are thinking: "Wendi was pretty much morbidly obese, her health was horrible, but she's now healthy. Why would she change anything with her diet when she has already found what works "?

Well, it's true. I am extremely healthy compared to how I was before I started consuming raw foods. Here are some pictures to show the changes, to motivate some of you currently struggling with eating more raw foods...

Okay, so here's a recipe that may make you raise an eyebrow. "Baked " "Rice " Well, it's not really baked and there isn't really rice in it, but it tastes like a baked rice and veggies dish! I created this one day by mistake and we all loved it.

Baked Rice and Veggies

2 cups pureed sunflower seeds

I received some very sad news about the holistic doctor I've been seeing during my raw journey. Dr. Amy Ruth Stine died Saturday after a rock climbing accident. This news breaks my heart. Dr. Stine was an amazing woman and doctor. She was extremely intelligent, acutely in tune with how we are all connected and one, compassionate, loving, thoughtful, and had a gift of really getting to know each patient as an individual and friend.

It was with Dr. Stine's care that I was able to track my progress with the raw food diet. She encouraged me to follow my instincts (which were telling me that raw is the way), cheered me on with the many changes that I was going through (physically, mentally, spiritually, and emotionally) over the years, and told me many times that I inspired her! Imagine how wonderful that made me feel---to be inspiring someone as wonderful as Dr. Stine.
