Our friend Kevin Gianni is turning 30 this weekend. When you do the math, that means he was born December 7, 1978, which was pretty much the apex of the disco era in America.It's no wonder the man struck the above pose in our back yard; dude's got the Village People in his blood! It's not much longer before I'll be serving all kinds of delicious foods to those attending the 3-Day Raw Food Spiritual Ashram Retreat! I've been working on the recipes and taking pictures to include with the bound materials going home with everyone attending the retreat.

And you'll love watching her demonstrate how to make 100% raw hummus. Mom might be 100% Italian, but she makes a pretty mean 100% Lebanese raw hummus, which is a pretty popular dish in my family. Jim here... Wow, we haven't posted in a few days. That calls for some action! Hmmm... how about taking a look at some delicious mini pizzas Wendi whipped up the other day:
We went absolutely nuts for these little "pizzas." They were both tasty and fun. If memory serves, I believe she made them by taking slices of firm roma tomatoes, spooning on some improvised pesto sauce that she whipped up, sprinkling on some chopped basil leaves, sprinkling on some "cheese" that she made with ground Brazil nuts, garlic, and salt, and then topping each "pizza slice" off with a half cherry tomato. No recipes necessary here; just take a look at the picture & go try it!
Hey everyone!? Just one long weekend left for Wendi and KDcat to (frantically) pack for their cross-country roadtrip. Yep, Monday night I'm dropping them on that midnight train to Portland. Wait until you see the spread of trip-snacks they're taking along. (We took some pictures of the raw foods smorgasbord sent by our generous snack sponsor, Natural Zing).
Today, since it's fun-filled Friday, I thought I'd share a little tale of frustration (although meant in kind of a funny way) relating to my own diet. You may have read my mini-manifesto a few weeks ago about my recent quest for simplicity. Well, Wendi and I have both largely maintained that kind of existence for a while now -- especially when it comes to the breakfast smoothies (pineapples galore!) and lunch salads. I have to admit that my energy seems to be trending upward very nicely!

Wow, it's been four months since we've run an article in our "Produce Buying Tips" series! Well, in today's installment, we want to remind you that our tips don't stop at the grocery store; you want to make sure you store your produce properly once it is at home to keep it fresh for as long as possible. After all, what good is your amazing organic produce going to do you if it goes bad? (That would be some super-expensive compost!)
Since Wendi has a difficult time right now with many motions involving her shoulders and wrists, I've taken over the responsibility of putting our groceries into the refrigerator. (I'm usually the "carry it all into the house" person, and then she likes to put away the refrigerated stuff.) But, wow, who knew so much went into storing vegetables and fruits I had no idea some things required air circulation, while others needed to be kept in sealed bags. Over the years, Wendi has fine tuned a system for keeping our fridge produce as fresh as possible and for maximizing storage time.

I'm not sure I'm getting enough carbs 'cuz I eat very little grains or beans and I am always worried of overdoing fruit.
Well, rest assured that if you are consuming enough calories with your diet, and not exclusively eating fats and proteins, you are most likely getting enough carbohydrates. Carbohydrates exist in just about anything you can eat. By simply eating enough food during the day, you can easily meet your body's carbohydrate requirements.
There are two classifications of carbohydrates: simple and complex. Grains and beans fall under the complex category, while fruits fall under the simple category.

Hi everyone!? Sorry for not posting yesterday. Things got crazy-busy on my end, and Wendi is still out of town on her tour. I know poor Deb Young is eagerly awaiting our next installment, as that's the one from Wendi and KDcat's visit to sunny L.A. (during which they had SO much fun and captured some great footage at a raw restaurant there!). However, I honestly do not have a single free moment this week. We have an enormous bank of these cameras, all feeding live streams to our costly, off-site high-tek storage facilities, monitoring every room in the house -- all to capture moments of inspiration such as this one. Why carry pen and paper all the time when you can simply install hundreds of "inspiration-cams" and pay techies to maintain a gargantuan bank of petabyte hard drives ? Hi everyone! It's Wendi here, back to updating the blog and giving Jim a much-needed break. ;-) He did an amazing job with all he did while we were away (his full time corporate job; assisting me with a part-time computer job; keeping the house ready for realtors and potential buyers to stop by; dealing with some sad issues around our dog, Julia; connecting with our hosts and those requesting meetups/talks across the country; catching up with KDcat and I for a bit each evening to hear how we were doing; collecting pictures/videos/notes from me to then go through and create blog posts for all of you; helping friends fix up their attic into a useable place; and so much more)! He missed us a lot, and we missed him a lot, too.
So, here we pick up from where we left off with our travels yesterday...
It wasn't easy leaving Arizona. KDcat and I both wished we had more time to play on the rocks in Sedona. But, we'll keep that for a time when all three of us (next time with Jim) can be there to experience the wonder of that beautiful place. So, it was off to New Mexico! Since our host in Albuquerque was going to be busy until the evening, we slept in a bit before leaving Arizona.
In Albuquerque, NM, we stayed in the home of the beautiful Darshanie, who was out of the country visiting her daughter and attending the wedding of her brother. I met Darshanie at the Peaceful Valley Ashram a few years ago (the same ashram where I held a raw food spiritual retreat). She's one of Leela Mata's beautiful and talented daughters, creating candles which she sells as well as offering intuitive readings [click here to learn more about Darshanie]. It was wonderful to be invited to stay with Darshanie during our travels, and I was a bit sad that she wouldn't be there when we arrived, but who would ever miss out on the chance to attend an Indian wedding ! If you're ever invited to attend one, consider it a huge honor and accept the invitation. Indian weddings are breathtakingly beautiful in so many ways.
