End of day 4:

Yesterday I decided to go ahead and consume what my body was telling me it wanted: cooked, fermented rice and lentil pancakes. Well, the restaurant nearby that makes the Uthappam doesn't serve them until 5pm and it was lunch time. So, I ordered the simpler, steamed, fermented rice and lentil patties called Idli.

Today, and every day, I am thankful for lovely Mother Earth. Where would we be without Mother? May we always care for her in a gentle and loving way.

Short post today... We're currently dealing w with a pesky kitchen drain issue that's wreaking havoc in our household. Fortunately, a very talented and power-tool-weilding local plumber just fixed the problem. In the process, he seems to have applied those power tools to our bank account -- $175 for less than one hour's work!? (Ouch!) And the kicker is that the current state of our kitchen is "absolutely atrocious."? I'm serious... we're at like DefCon 5 in terms of the disastrous nature of that room -- and as you well know, for a raw household, that's probably 10 times more frustrating than it is for others. (I smell a whole post coming soon on this topic ...)

Today, we mainly just wanted to say that, at the end of our post yesterday, we briefly asked what you would like to see more of here at Pure Jeevan. We have received some great comments and emails in return, and have decided to devote tomorrow's post to responding to / addressing some of the suggestions we received. Those consuming a raw food diet sometimes use a dehydrator to prepare raw food dishes. They do this at low temperatures, below the point of actually cooking the foods, to intensify flavors, reduce the amount of moisture in the dish, and sometimes to take the chill off something they'd rather serve a bit warmer than straight out of the refrigerator. There is a practice that we've seen, however, that is actually cooking the very foods were taking such great measures to consume raw! Let me share an experience I had when I first started eating raw foods, that will help explain how some of us may be cooking our foods by mistake.

In the beginning of eating raw foods, my entire family loved the Vegetable Stir-Dont-Fry I used to make (you can find that recipe in the free eBook you downloaded when you first visited our site). One day I created a double recipe so we could eat more the next day, without going through the process of preparing it again fresh. The following day I took the bowl of Stir-Dont-Fry out of the refrigerator and put it into the dehydrator to take the chill off. It wasn't warming up fast enough on such a low temperature, so I thought I'd just cover the dish a little bit to trap in some of the heat that seemed to leave each time I checked the dish and stirred it around. So, I took a plate and placed it on top of the bowl with about an inch, or two, opening.

Last time on Raw Foods 101 we answered the question, "Why should you soak nuts / seeds before eating them."? Naturally, many readers then asked the next logical question, "How LONG should I soak them before eating " Great question!

Don't forget:? You're soaking the nuts and seeds to "wake them up" as would happen in nature. When seeds are soaked in the springtime rain, they wake up and begin to sprout. When this happens, the nutritional content of the nuts and seeds changes (they become an even greater powerhouse of nutrients).

Jim's mother, JoAnn, LOVES pasta. I'm sure many of you can relate to that---pasta is a big part of the cooked diet and just about everyone loves it. When going raw, many individuals say they just can't do it because they miss pasta too much. Well, that's no longer a problem. There is a raw way to make pasta and you are going to love it if you haven't experienced it, yet!

So, we've been building up to something exciting all week long -- and here it is! As it turns out, Kevin Gianni is not only a "renegade health" expert, motivational speaker, and all-around great guy; he's also a singer/songwriter!? Continuing with our week of ways to keep a sharp mind, let's focus on the one widely accepted indicator for dementia or alzheimer's: heart disease. If one wants to dramatically reduce the chances of brain degredation, the first step to take is keeping the heart healthy.

The key advice most health specialists agree on when it comes to a healthy heart is the reduction (ideally eliminatain) of unhealthy fats in the diet. The unhealthy fats are usually seen as solid fats, like butter, margerine, and shortening. However, it's important to not overlook the fats that are also found in meats. By substituting unhealthy fats with something healthier for your heart (like extra virgin, cold-pressed olive oil), as well as transitioning to leaner meats if you are a meat eater, you will be taking some important steps in keeping your heart healthy, as well as your mind.

There is a lovely blanket of quietness covering Pittsburgh.Everything has been cancelled for the evening and people are staying home.Do you ever wonder what others do with their lives, how they spend their time when they are away from the rest of society and closed up in their own homes? I'm always curious---I think people are fascinating!

Jim here... A few months ago, I was in our local food co-op's juice bar. I'd ordered an apple juice and had cringed when I saw the barista chop up four Granny Smiths and nonchalantly toss the whole lot, seeds and all, into the juicer. That juice was for someone else. So, when my order came up, I politely requested that he cut the seeds out -- a request he reluctantly granted, although not without showing considerable annoyance. My thinking was: Hey, those seeds contain cyanide! Why would I want to consume that, even in small amounts

But then... Have you ever known anyone who died from eating apple seeds? ?I know I haven't. Also, after mentioning this to a few people I know, I found that a number of them regularly ingest apple seeds. And, well, they're still living. So, is there any truth to the rumors? And, should we be concerned at all about this?

I love this video, in which Wendi interviews our new Portland-based realtor, Bill Futrell. It's a nice interview, but I love the way Wendi's enthusiasm for raw foods rubbed off on Bill almost immediately. There's even a moment in here in which Bill starts talking about Natural Zing. One thing I can tell you for sure: Portland is WAY more expensive than Pittsburgh. A year ago, I invested a ton of time reading about low-cost cob houses, straw-bale construction, Earth-ship homes, homes fashioned from "obtanium," thatch roofs, off-the-grid systems, igloos, you name it -- anything DIY-oriented. (Okay, well not igloos; that was a joke. Even though igloos are probably pretty neat-o.) I'm sure we'll get to many of those types of projects one day still. But for now, as you can see, we're going to put down roots in a really great city out West. We're doing it with intention, though, and in harmony with our mission to help ourselves and others obtain the highest levels of health and happiness.
