Even though it's not time to share everything with you about the life-changing events going on with us here at Pure Jeevan, I'm going to try harder to squeeze in a few minutes once in a while to update this blog with other information. I miss coming here and connecting with all of you. Thank you for so many lovely emails that you've been sending to me. I will be responding to all of you very soon. Please forgive me for taking so long to respond, but once we fill you in on everything that's been going on, I think you'll understand that it's difficult to find time to keep up with email and blog writing, among other things.
The latest news, as far as raw foods go, is that I'm having a love affair with a particular fruit. When I was transitioning to raw foods over two years ago, and also during the first few months of eating 100% raw foods, I was in love with young Thai coconuts. I couldn't get enough of them and they did some amazing things for my body---the most amazing was lowering my cholesterol to a healthy range within one month! After many months of consuming at least one coconut per day, however, my love affair ended. I still loved those Thai coconuts, but they just weren't as attractive to me anymore.
Here's a basic recipe that can be used to create any nut milk!

Yahoo recently ran a photo series on their "omg!" channel entitled "Celebrity Slim-Down Secrets." It actually has a nice set of before and after photos of celebrities who have lost weight. The set is here.Featured are Kelly Osbourne, Seth Rogen, Jennifer Hudson, Jerry Ferrara, Kirstie Alley, John Goodman, Jordin Sparks, Jason Segel, Drew Carey, Sara Rue, amd Kevin James. ?Most reported using personal trainers, changing up their diets, and getting more exercise (or some variation of those three).
We didn't read any reports of raw food diets in the story, but looking at before and after pictures is probably always a good idea, if only for visual inspiration. It's nice to see a broad range of people turning their health around, too. Some are younger celebs; others in their 40s, 50s, and 60s. So, it's nice to know that major changes are possible at any age.
Last time on Raw Foods 101 we answered the question, "Why should you soak nuts / seeds before eating them."? Naturally, many readers then asked the next logical question, "How LONG should I soak them before eating " Great question!
Don't forget:? You're soaking the nuts and seeds to "wake them up" as would happen in nature. When seeds are soaked in the springtime rain, they wake up and begin to sprout. When this happens, the nutritional content of the nuts and seeds changes (they become an even greater powerhouse of nutrients).

Here it is: Putting it all together. Here you'll see what we use for our taco shells and how we build up our taco. Quite often, we also make a raw sour creme using cashew nuts and lemon juice. But, for these tacos, it'll just be meat, salsa, and guac. Enjoy!

Clarifications: (1) Yes, as some of you may have guessed, Wendi's body has circled the sun more than 25 times. If you visit the site, I explain what the "25th" birthday means a little more. As we said yesterday, we have some fantastic videos to share from RSF East last weekend. To launch a series of interviews, we want to reiterate that Pure Jeevan has always been a holistic site, meaning that we like to focus on all aspects of a human being's optimal existence (mind, body, spirit, and emotions). While it's not always "all about the food" here, it's also fair to say that it all really does start with the food -- super-nourishing 100% raw living foods! RawDawg Rory was a huge pleasure to meet and hang out with. The man exudes happiness, and it's quite infectious! We had a great time talking, and of course talked a lot about tasty raw foods. In this video, RawDawg shares a delicious dessert recipe. Here it is:
Last year when I organized a raw food spiritual retreat at an ashram, I met some very lovely people. Two of those individuals were Patty and Denny (you can visit their blog to say hello to them). They were new to gourmet raw foods, so they were enthusiastic learners at the retreat. When they returned home after the blissful weekend, they began using their new raw food knowledge. Here are some excerpts of emails I have received from them since the retreat last year:

We've been almost 100% raw since the retreat. ... We have two events scheduled for this weekend and we are looking forward to both of them! The first is a Raw Food Potluck Meetup. I haven't decided what I'm creating, yet. So far I'm thinking I'll make either an apple pie or some beet noodles with alfredo sauce, but I know how things usually go when it's time for me to prepare something special. I usually feel like I don't want to make what I had planned, and I search around in the fridge to see what pops out at me. I almost always go by what I'm inspired to create at that moment. So, who knows what I'll end up making. I'll try to take pictures of my creation as well as pictures of the other raw food dishes that others bring.
This will be our first raw food potluck. When I first went raw it was something I was doing special for myself, by myself, so I didn't join any of the raw food meetups and didn't want to make it a group activity with my friends.After two years of raw (a little over one at 100%), I've done (and continue to do) what I needed for myself.Now, I'm ready to share my experiences with everyone and to be an active member of the raw food community.So, I'm looking forward to the raw food potluck tomorrow!? Well, Wendi and our daughter, KDcat, are headed out this evening on a train for their cross-country tour.
