Jim here... Since we posted Wendi's two-part series on pasta-making techniques (part 1, part 2) last week, I thought I'd follow up with an additional novel use for the spiralizer -- super-delicious, blazingly fast, ultra-low-fat sweet potato chips! We've done some really great things with sweet potatoes before. (Anyone signed up as a member of the Pure Jeevan family has likely already received our prized sweet potato pancake recipe.) But, these chips are amazing because they satisfy that unmistakable urge for crunchy, healthy snacks -- and in record time. Friends, if you have a dehydrator and sweet potato on hand, you could literally be enjoying these things in under three hours. So let's get going!
As Wendi demonstrated in the videos last week, you can easily make "rounds" using the spiralizer by simply making a vertical slice throughout your vegetable prior to placing it on the spiralizer. So, if we were looking down at the sweet potato, the cut (which goes all the way down the length of the vegetable) would look like this:

I'm still sticking with my mono meal eating for Navratri. It's not as easy as I thought it would be, probably because I thought I wouldn't have any problems at all. Anyway, I'm sticking to it and we'll see if it makes me feel more energetic and healthy after the nine days are completed.

It's a beautiful day here. The sun is actually shining enough through the clouds to soak up some of its lovely rays. It feels so good. What a great way to start the weekend! We have no set plans, other than a trip to the local food co-op and a visit from the bunny. If the weather continues to be this nice, maybe we'll take the puppy over to the park and spend the afternoon enjoying the sights, smells, and sounds of Spring.
Jim here... Of the many lessons 2008 brought to our household, one standout was certainly the importance of having patience. That s because we set some lofty goals, and lofty goals are often vital teachers.
For example, imagine sitting in your living room one day and deciding: "I'm going to scale Mt. Everest."? (For the purposes of this example, imagine also that no political, administrative, or financial restrictions exist to prevent you from doing this immediately if you really wanted to -- things like passports, entry visas, transportation costs, etc.)

Last night I dreamed of meandering through an unfamiliar cityscape, following some lonely sidewalk next to a river at night, feeling particularly sad and miserable beneath dim yellow street lights. I wore a black suit, carried a highball glass, and was absolutely drunk!
Having crossed the river, I soon realized (even in my dream-drunken state) that I'd been wandering aimlessly. Feeling rather pathetic, I decided to walk back across the river and sober up in a casino that I knew was there. Drunk and depressed, I figured I'd just sit in front of a slot machine for a few hours.

Short post today... We're currently dealing w with a pesky kitchen drain issue that's wreaking havoc in our household. Fortunately, a very talented and power-tool-weilding local plumber just fixed the problem. In the process, he seems to have applied those power tools to our bank account -- $175 for less than one hour's work!? (Ouch!) And the kicker is that the current state of our kitchen is "absolutely atrocious."? I'm serious... we're at like DefCon 5 in terms of the disastrous nature of that room -- and as you well know, for a raw household, that's probably 10 times more frustrating than it is for others. (I smell a whole post coming soon on this topic ...)
Today, we mainly just wanted to say that, at the end of our post yesterday, we briefly asked what you would like to see more of here at Pure Jeevan. We have received some great comments and emails in return, and have decided to devote tomorrow's post to responding to / addressing some of the suggestions we received. In writing and researching our previous two posts, we came across a number of articles mentioning the benefits of chlorophyll for those who have been exposed to radiation. Nothing seemed to go so far as to call chlorophyll a cure-all. But, many sources cited clear benefits -- and it's great to read about potential preventative measures and treatments available through natural means. Finally, some super news to share!? On Monday, after a l-o-n-g wait, Wendi finally had her appointment with a actual LLMD. (That stands for "Lyme Literate Medical Doctor."? If this and the news of Wendi's Lyme Disease is new to you, check out this post.)
I'll cut straight to the good part: Her prognosis is excellent! Yes, she's still in a world of pain and misery at the moment, but he believes (based on her blood work and her symptoms) that we've caught this early enought to fully eradicate the Lyme. (At least, that's how I understand it. I'm actually not clear on whether Lyme is ever 100% eradicated, or if it's just forced into dormancy or irrelevancy. Perhaps Wendi can clear that point up later.)
Jim here... Whether you've had the pleasure of knowing Wendi for decades as I have, or have only recently met her, I think you'll be absolutely stunned by this inspirational video.
