All this month, Jim has been experimenting with a low-fat, raw vegan diet. He discusses his reasons for trying a low fat diet, and how he s been feeling with the changes, in his first and second posts so far this month.

Many of you have heard us mention the famous low-fat, raw vegan 80/10/10 diet here on our blog. Well, today I d like to highlight the individual behind that diet. So?

Here's part two of Wendi's travelogue from Sedona:

After leaving ChocolaTree Cafe, and interviewing the lovely Kelly, we went to the famous Sedona Airport vortex spot, but there was no parking, so we drove to the top of the rock/mountain and there was a farmer's market going on. We took a quick video of what was happening up there, to share on the blog. There was a cool musician playing: Vighas Kendzia, who plays piano, native flutes, sax, and more. From there, we headed out to find a vortex spot that Kelly described. I'm not sure if we found the exact spot, but we really enjoyed the place we found. We ate our lunch there and it was DELICIOUS! The water, the trees, the large boulders, the fresh air...it was a very special place. We then drove to one of the more well-known hiking/vortex spots: Bell Rock.The hike in is a bit over a mile, then there is the climbing (which isn't really recommended by the park officials, but it's absolutely necessary to fully experience Sedona!). I gave KDcat some space to explore the area a bit on her own, as this was a very special time for me a few years ago. There is a certain energy and cleansing that happens when visiting Sedona. If any of you are going through changes in your lives, or feel like there is a shift that needs to happen, I highly recommend visiting Sedona for a few days. KDcat felt some powerful personal healing, which didn't surprise me at all. It's a place I'd love to visit every few years, or so, as it definitely holds some sort of healing energy. Maybe it's just the views, or the peacefulness of being away from everything. Whatever it is, I highly recommend visiting Sedona and climbing around on the rocks!



Some of you know about my love of Sedona, AZ, especially those who were following the Pure Jeevan blog a few years ago. It was a visit to Sedona in 2008, for a Raw Spirit Festival, that my life dramatically changed once again. This time it wasn't the food that was healing me, but it was related to the raw food lifestyle. I felt healed on many levels while there in Sedona, surrounded by the beautiful red rocks, cool and sandy earth beneath my bare feet in contrast to the warm sun on my skin, and embraced by a vibrant, loving community of like-minded individuals.
There's a certain magic to Sedona, if you believe in such things (well, I suppose it's there even if you don't believe). ;-) ?For me, I believe that we can many times find scientific reasons to explain much of the magic in this beautiful world, but that doesn't have to diminsh the experiences we have. Sedona is known for its powerful vortex energy, which has a way of stirring up our own energy systems and bringing about healing, balance, awakenings, etc. ?Is this energy measurable through science, or is it more metaphysical in nature? I don't know and to be honest, it doesn't matter to me. There were life-altering changes that took place while I was in Sedona in 2008 which rippled out beyond me and touched the lives of those very close to me, as well.

Some of you have noticed that we've seemed a bit silent, or asleep, here at Pure Jeevan. We haven't abandoned our blog or our readers, though! For the next two weeks, it may continue to look like we are sleeping, but in reality we are doing anything but that! :-)

Here's an impromptu interview with Matt Miller, the gourmet raw foods chef from Maggie's Mercantile, a vegan/raw restaurant in Pittsburgh, PA. We met Matt @ a recent Raw Foods Meetup here in Pittsburgh. In the video, we discuss Matt's famously addictive raw blue corn chips -- deemed by yours truly as the "holy grail" of raw foods. Below, I'll go over the ingredients, etc.

Here are more pictures of some of the foods we've been eating. Over the past year, we've pretty much been eating simple foods (except for the time I was preparing meals for the Raw Food Retreat). However, recently KDcat has been doing some extreme yo-yo eating between raw foods and packaged/unhealthy cooked foods. The back and forth has been causing her to experience a bit of a tummy upset. So, I've decided to make our meals a bit more exciting for her---so she'll possibly not feel so tempted by all of the colors and artificial flavors of the packaged "foods" she's been eating.

Jim here... An unusual occurrence prompted this post, and I'm unsure as to whether it's significant. I've talked about some of my favorite non-raw items before -- things that were tough to leave behind as I embarked upon this raw foods journey. I think I covered pizza in a relatively recent post.

Corn chips were another. In fact, after Wendi went 100% raw and I more or less began to follow her dietary choices, I clung to corn chips for dear life for quite a long time. I began eating a LOT of salsa in those days. Sometimes, that would be all I'd eat for lunch -- just an entire jar of salsa and a bag of corn chips (though, by then, I'd at least usually buy the organic ones and, quite often, a baked variety of chips as well).

When I finally decided I'd be better off transitioning to an all raw lifestyle, I figured my love affair with corn chips had come to an end. Farewell beautiful chips, I thought. I'll never forget our delicious crunchy time together. And that was that. I never looked back.

But then, at a local raw foods pot luck, I met a raw chef who had more or less perfected a raw corn chip recipe. Could it be , I thought. Has this delicacy returned to me after all, as though via some sweet culinary destiny? Ahh, my friends, that was a glorious day. Chips and salsa had returned to me in an enlightened raw form. I could enjoy them once again, guilt free. And enjoy them I did -- usually using a local shop's "Peruvian Purple Corn" (a living, sproutable, dried corn product).

Alas, fate stepped in once again. "Thou may partake of these crisps any time thou wishest," fate boomed. "Yet, in order to do so, thou must prepare them thine self using thine Vitamix and requiring an enormous flax-sticky mess with extended clean-up time, and thou must have parchment paper available at all times, and thou must exercise great care and patience in using your Excalibur, for these chips must dry for many an hour before ready."

Yeah, it was a bit of a chore to produce them. So, as the novelty of chip making and eating wore off, I slowly decreased the frequency of going through the messy, time-consuming hassle of preparing them. Until yesterday, it had been literally months since I made a batch. But... we'd ordered a few pounds of the corn from Natural Zing lately, and I found myself with some extra time the other night. So...

Now, I'm going to pause for a minute for a tangent on digestion. I know a great majority of people, it seems, complain of various digestive disorders. As a result, we have many raw foodie specialists schooled in the nuances of food combining. Oddly, I never paid much attention to these discussions, nor offered input on these matters, because they simply weren't relevant to me.

In fact, I likened my own digestive system to some kind of nuclear powered garbage disposal. It didn't matter what I ate; digestion wasn't a problem for me. So, for example, I'd routinely finish off heavy meals, and then follow them with a huge slice of juicy watermelon (a major no-no according to common wisdom). It just never bothered me.I always joked that, even though I'd been raw for ages, I could still probably go eat a Big Mac (not that I would) and be unaffected by it.

So powerful was my stomach acid that, admittedly, I sometimes privately *worried* whether this might mean something was wrong with me. I mean, shouldn't some of the things I was eating make me sick? Was it "good" to not be made sick by what is generally regarded as poor food combining choices? Do people commonly suffer from problems of efficiency as well as deficiency ? I still do not really know the answer to these questions, and suspect the answer is rather complicated, anyway. Fortunately, it doesn't matter now because...

Something finally made me sick!? I'm laughing now about that, but I spent most of the evening in terrible stomach pain after having over-indulged in some of those (in)famous raw purple corn chips.

So, what happened ? That's an interesting question for me. Here are some possibilities: (1) Perhaps my hyper-active digestive system *was* in fact a problem, and now it's beginning to normalize. Perhaps, had I been healthier all along, I would have been made sick by some of my food choices, but now my health is improving!? (2) Perhaps it's a fluke and I simply shouldn't have eaten mass quantities of corn and flax so late at night. (3) Perhaps my body is improving in its ability to communicate with me, and/or that I'm getting better at listening, and that the message here is that corn is not something my body gains nourishment from -- at least, not in this dried-reprocessed-redried form. After all, some leading raw food authorities, like Gabriel Cousens, aren't fans of corn (even fresh corn!).

Oh sure, there may be other explanations (e.g., "a bad batch of corn"). But, I'm actually most interested in #3, above. Even though this is an extreme example (more intense than it needed to be), I'd like to think that I'm getting better at knowing what I'm being nourished from and what I am not. I'd like to think that this is a latent sense that can be developed, much like our ability to know things by feeling and intuition rather via pure rationality all the time.

But, with food, I think it's a matter of inventorying your physical sensations head to toe, and also as a whole. How is the food you're eating making you feel? Do you feel satisfied or still hungry? Do you feel light or is the food sitting kind of heavily? Do you feel energized or dragged down? How's your mental clarity? Do you feel spacey or more grounded? Do you feel noticeably happier or more sad than before? How are all of these things mapping out over time? Is your weight moving in a positive direction for you? Are your illnesses improving? Food is medicine, after all; it has all of these effects and many more!

For now, I think I can safely check purple corn off of my own personal list of foods that make me feel good. I suspect my old assertion about "being able to eat a Big Mac without any side effects" no longer applies -- and maybe this is a good thing. I think perhaps it signals some progress in my journey toward optimal health.

In any case, I think this kind of purposeful introspection is healthy, and something we should all strive to do more often.How about you? Had any similar experiences? What have you learned from them?

All this week on the Pure Jeevan blog, we'll be focusing on diabetes and the movement to naturally reverse it. We're working up to April 25th (my birthday!), which has been selected as the official Reversing Diabetes Naturally Day.

A warm, intelligent, and loving individual named Dr. Gabriel Cousens has been doing ground-breaking work and research on diabetes and diet. What he has found is so surprising that many people dismiss what he is saying, believing it to be false. But, I (along with many others in the natural health movement) am here to tell you that what Dr. Cousens has discovered is TRUE! You probably already know what he has discovered, of course: a change in diet (particulary including raw foods) can reverse diabetes!

Dr. Cousens did a small study on some diabetic individuals, documenting his work and findings. The resulting documentary is remarkable. We hosted a viewing of the movie at our home and the room was packed. Everyone sat silently, absorbing the truth of what they were seeing: diet CAN make a difference in a disease that is thought to be permanent and debilitating. Many of us had tears silently streaming down our faces, touched by the moving stories that were shared in the documentary. We were filled with a sense of excitement that there IS hope for those with diabetes!

Welcome to Day One of "Dressings Week" here on Pure Jeevan. After finding out that KDcat took it upon herself to film a segment of "Makin' It Monday, Guest Raw Chef Edition," I decided that we should probably spend an entire *week* focusing on salad dressings.

As some of you already know, along with regaining my physical health I've also been working on every other aspect of my overall health and being. I don't just want a healthy body---I want the whole package (vibrancy and bliss inside and out, in every way possible).

One area of my mental health that has been slow to heal is my self confidence. I continue to work on it in many ways and have made some tremendous progress over the past year, or so. I feel worthy of so much more than I ever did before.Many people never doubt their self worth---they have a good sense of who they are and assume that others see them as they are, as well.

I'm still doing my nine-day mono meals for Navratri. Since it's Makin' It Monday, instead of actually makin' a recipe, I'm dreamin' about it! After talking with my sweet friend Melissa, I thought I wanted to eat spinach pie when I end my mono meals. She was talking about it, shared how she was going to create it, and my mind was filling with the image of spinach pie, the smell and taste of it, and I wanted it right then.But, we don't have any spinach in the house right now. Since I end my mono meals after tomorrow's lunch, and don't have time to buy spinach at the food co-op, I decided to dream some more about what I'll be eating for tomorrow's dinner.

Then it came to me. I want beet pasta! Not just any beet pasta, but beet pasta topped with a creamy alfredo sauce! I picture it in my mind; I can imagine the taste of it, the texture, and it's so delicious. I think I want something green with it, too. Perhaps I'll start with a small salad. Ooh! Yes, that's what I'll do!
