On this beautiful May Day, I am thankful for creativity. We all have a creative ability within ourselves to imagine all kinds of things.In yesterday's post, about asking myself questions in order to make changes in my life, I talked about having an image in my mind of how I wanted my life to be in the near future. I was using my creative abilities to see my future as happy, vibrant, and healthy.
Organizing the 3-Day Raw Food Spiritual Ashram Retreat has brought with it the bonus of meeting some fantastic people and the opportunity to learn about their amazing raw food snack companies.
A few weeks ago, we hosted a Diabetes Awareness week here at Pure Jeevan. This was our contribution to the larger Reversing Diabetes Naturally movement that we blogged about. Jim here... Since we posted Wendi's two-part series on pasta-making techniques (part 1, part 2) last week, I thought I'd follow up with an additional novel use for the spiralizer -- super-delicious, blazingly fast, ultra-low-fat sweet potato chips! We've done some really great things with sweet potatoes before. (Anyone signed up as a member of the Pure Jeevan family has likely already received our prized sweet potato pancake recipe.) But, these chips are amazing because they satisfy that unmistakable urge for crunchy, healthy snacks -- and in record time. Friends, if you have a dehydrator and sweet potato on hand, you could literally be enjoying these things in under three hours. So let's get going!
As Wendi demonstrated in the videos last week, you can easily make "rounds" using the spiralizer by simply making a vertical slice throughout your vegetable prior to placing it on the spiralizer. So, if we were looking down at the sweet potato, the cut (which goes all the way down the length of the vegetable) would look like this:

On this lovely Valentine's Day, I am focusing on how thankful I am for LOVE! I'm not into the whole this-is-the-day-you-are-supposed-to-show-love thing, though. I think love is something that should always be around, felt, and shared. Every day is a new day to express the love you have in so many varied ways, why hold it back for one special day a year?

Here's an impromptu interview with Matt Miller, the gourmet raw foods chef from Maggie's Mercantile, a vegan/raw restaurant in Pittsburgh, PA. We met Matt @ a recent Raw Foods Meetup here in Pittsburgh. In the video, we discuss Matt's famously addictive raw blue corn chips -- deemed by yours truly as the "holy grail" of raw foods. Below, I'll go over the ingredients, etc.

We've got three incredible posts coming your way this week, and we're going to get started right here and NOW with a one-hour interview with the incredible Kevin Gianni. As most of you know, we postponed our RV Tour recently.As part of that, we'd planned to stage a fun event related to the All Raw Directory.We'd planned to air this interview with Kevin (conducted back in December 2008) for that event.
Fast-forward to today and we realize that, like our raw RV Tour, our All Raw Directory promotion will have to wait. It's funny how things trickle down like that. But, all is not lost. This is still an incredible interview -- and guess what ! It's only part one of a two-part interview, as well as a special super-fun surprise we'll be announcing on Friday. We promise: No one in the raw food community will want to miss Friday's post. All we'll say now is that it's a truly unique, limited opportunity unlike anything you've seen here before!
