I'm fairly sure that we've covered how to *open* a young coconut (also known as a Thai coconut). It seems like each raw food site has a video and/or article about that. I think it's actually a commandment in the Official Raw Foodism Bylaws somewhere: "Thou shalt show everyone how to open a coconut."
But *selecting* them... that's something that's not often covered in-depth. It's an advanced topic -- super-advanced, even. So, are you ready to learn the secrets?

Jim here... A few months ago, I was in our local food co-op's juice bar. I'd ordered an apple juice and had cringed when I saw the barista chop up four Granny Smiths and nonchalantly toss the whole lot, seeds and all, into the juicer. That juice was for someone else. So, when my order came up, I politely requested that he cut the seeds out -- a request he reluctantly granted, although not without showing considerable annoyance. My thinking was: Hey, those seeds contain cyanide! Why would I want to consume that, even in small amounts
But then... Have you ever known anyone who died from eating apple seeds? ?I know I haven't. Also, after mentioning this to a few people I know, I found that a number of them regularly ingest apple seeds. And, well, they're still living. So, is there any truth to the rumors? And, should we be concerned at all about this?

On this beautiful May Day, I am thankful for creativity. We all have a creative ability within ourselves to imagine all kinds of things.In yesterday's post, about asking myself questions in order to make changes in my life, I talked about having an image in my mind of how I wanted my life to be in the near future. I was using my creative abilities to see my future as happy, vibrant, and healthy.

Jim here with another wonderful edition of Weird Wednesday. Here's something I find a little weird about food (and, I apologize in advance if this comes off a little preachy).
See, I work in an office and sit rather close to the corporate kitchenette. Routinely, people bring in junk food to set out for everyone -- cookies, donuts, cakes, pastries, pies, candy bars, nut rolls, cheesecakes, summer sausages, cheese cubes, fondues, etc. The thought seems to be that, in putting these things out for everyone, you're showing you care for them.Offering large servings of concentrated fats and refined sugar is viewed as a favor, as an altruistic service for your fellow coworkers. But this odd fact isn't even the weird aspect of my post (although, now that I think of it, that is pretty weird).

Jim here... Since many people have asked me how she liked the surprise gift, here's a quick, unedited video taken last Saturday on Wendi's birthday. We had gone to the park that evening to hang out and catch some fresh air. I took a few minutes to ask her about her day, and thought I'd share this with you.If I showed you the video of her receiving the gift that morning, I'm afraid all you'd see would be tears all around the dining room table. (We were all rather emotional about it.) So, take a look at this video for now. Wendi said that she wanted to write something here as well. So, that will no doubt be coming soon.
By the way, at the end of this video, Wendi mentions another video of a man we interviewed earlier that day on Wendi's birthday. I was going to edit some of that in, but we decided to run that video here on its own this Thursday because it addresses a question Wendi gets quite often. You'll love that video, as it's a great testament to the power of raw foods. Ever since developing a personal conviction a few years ago that following a raw vegan existence was the best lifestyle for me, I've lived somewhat in conflict with the day-to-day corporate business environment in which I make my living at the moment. As we've directly stated many, many times, we're in the process of changing all of that. But, making such a huge change takes a long time because careers are in many ways very anchoring. We may write more about that process because it's true that going raw (or, really, adopting any kind of diet outside of what most other people eat) can lead to significant changes in your life. Between Wendi and me, I think we've gone through pretty much all of them, and there's certainly value and relevance in sharing most of those things here. Today, though, I thought I'd share what I call my "$75 Salad Story."
In the business world, "networking" is among the more prevalent activities anyone does. It's pretty much always going to involve food , right? It's always a breakfast briefing, meeting a client over lunch, or attending a dinner party (complete with a cocktail hour). ?The deck is more or less stacked against you at these things because, let's face it, they're usually set up to provide what most people perceive as a pleasant experience. And, quite often, that means a certain degree of culinary decadence / indulgence -- invariably at venues that have never heard of raw chocolate or raw apple pie (which, to me, is 10x more appealing and exciting than the ubiquitous "chocolate fountain").

Did you know that approximately 70% of your muscle, 80% of your blood is water, and 85% of your brain is made up of water? When we are born, we are nearly 90% water by weight, and as we age we lose more and more water (think of a grape slowly shriveling up into a dried raisin).
If you consume 100% fresh raw foods (with none that have been dried or dehydrated in any way), your body is receiving the cleanest, most pure water possible and you probably don't experience a lot of thirst. The less fresh foods an individual consumes, the more their needs for water increases.
