This recipe is an adaptation of one from "Rawvolution", by Matt Amsden. As of this point in time, "Rawvolution" is my favorite recipe book. Most of the recipes are high in sodium and fat, but very satisfying for those who are used to eating cooked foods.
Egg-less Egg Salad
We're into soft foods and treats these days, because Jim recently had a wisdom tooth extracted (KDcat insists he is less wise for having done so). We've been having a lot of fruit smoothies! I made a big mistake and created a smoothie with a grapefruit for the juicy part (I normally only use oranges). I don't care for grapefruit, because the bitter part just isn't appealing to me. However, I thought for sure that bananas and frozen berries would override the bitter taste of the grapefruit. It didn't, so I added some agave to the mixture and blended it again. Nope--still bitter. So, I asked Jim to taste it (he LOVES grapefruit) and he thought it was fantastic. He consumed the entire pitcher of the bitter concoction.
Today we welcome Shea Lynn Baird from Monday Night Live. As you may recall from a few weeks ago, Wendi and KDcat visited with Shea and her husband Stephen during their 2010 Trip. While there, they all attended a raw food meetup, and Shea brought a wonderful Thai salad. Raw Foods Demo and Dinner?
Short post today... We're currently dealing w with a pesky kitchen drain issue that's wreaking havoc in our household. Fortunately, a very talented and power-tool-weilding local plumber just fixed the problem. In the process, he seems to have applied those power tools to our bank account -- $175 for less than one hour's work!? (Ouch!) And the kicker is that the current state of our kitchen is "absolutely atrocious."? I'm serious... we're at like DefCon 5 in terms of the disastrous nature of that room -- and as you well know, for a raw household, that's probably 10 times more frustrating than it is for others. (I smell a whole post coming soon on this topic ...)
Today, we mainly just wanted to say that, at the end of our post yesterday, we briefly asked what you would like to see more of here at Pure Jeevan. We have received some great comments and emails in return, and have decided to devote tomorrow's post to responding to / addressing some of the suggestions we received. Hey, where the heck is Pure Jeevan this week ??? Sorry for the silence on our end; we're actually in Portland, Oregon, closing on our new digs -- the new HOME of Pure Jeevan!!! Exciting stuff, but we're SO busy that we may not be able to blog again until the week of June 7. But, we'll definitely return by then, and maybe even post a thing or two from here. It all depends on our internet situation. In any case, it's SO wonderful to be taking direct action on the future on Pure Jeevan. As promised yesterday, here s the Pure Jeevan cross-country tour itinerary! Will Wendi and KDcat be in your town or city? If so, please be sure to let us know, so they can meet you in person! We re all very excited that Pure Jeevan will be meeting some of you in person very soon!
We'll be posting a button on the right side of the blog later this week. When you click on the button, it'll take you to an up-to-date itinerary of all cities on the tour, as well as any talks/gatherings, etc. that may be going on. On that page, you may also be able to view some live video streaming of Wendi and KDcat as they're out and about finding the perfect location for Pure Jeevan. Stay tuned for more info!

This Thursday I want to give a special "Thank You" to Kevin Gianni. He was on my list for a Take the Time Tuesday introduction, but I didn't want to wait until then to tell you about him. I've been following Kevin's work on the Internet since he hosted The Raw Food World Summit last year. You can tell when you hear him speak that he's a genuinely nice, intelligent, caring person. He's honestly listening to what people are saying, trying to absorb the plethora of health information that's available. He asks a lot of interesting questions, too. He then takes what he has learned, condenses it, and shares the knowledge with the rest of the world. He does all of the hard work for us! For this, I wanted to give a special thanks to him.
Mmmmmmmmm! ?I'm sitting here at my computer eating the Best Organic Fuji Apple Ever. Don't believe me? ?Here's a picture of the apple I'm eating right now:
Looks dee-lish, right? ?(Okay, so maybe it's not the most appetizing pic in the world...) ?Anyway, one interesting thing about this apple is that I bought it (a whole big bag of them, actually) because it was so cheap. (I'm on a relatively tight budget these days.) ?But, if it was so cheap, how could it be so tasty? ?(And organic, too!) Well, that's where the basic law of supply and demand come in. Whenever a crop is at the peak of its season, the supply rises considerably. Instead of the store receiving X number of bushels of apples, they receive 5X or more. So, they slash prices to move that kind of volume.
